Pancake Day or Shrove Tuesday is definitely not the only day of the year where we eat pancakes. These are so good you would never believe they are grain free!
Makes 1-2 pancakes
Prep time 5 minutes
Cooking time 5 minutes
· 1 teaspoon of coconut oil
· 1 tablespoon of water
· 2 eggs
· 1 tsp of almond flour
· 1/4 cup of arrowroot
· 1 pinch of salt
· Blend all the ingredients together
· Heat a non-stick pan coated with coconut oil and pour the batter a little at a time. Pancakes should be thin.
· Flip over the crepes when the sides start to peel off the pan (Just a couple of minutes on each side)
How to Serve:
Serve with nut butters, coconut manna or drizzle with raw chocolate sauce.
For a savory filling serve with guacamole and salad, pesto and steamed vegetables or use them as tortillas for stir fry chicken with tomato salsa, peppers and guacamole.
