Makes 1 tray (34×11 cm)
1 cup of almonds chopped
1 cup of cashew nuts chopped
1 cup of dessicated coconut
1-2 tbsp maple syrup depending on desired sweetness
1/3 cup of dried goji berries
1/2 cup raw cocoa powder
2 tbsp chia seeds
1/3 cup nut butter of your choice (I use almond or cashew nut)
1/4 cup coconut oil
1/4 cup cacao butter
Melt the coconut oil and cacao butter over a low heat in a saucepan.
Mix the chopped almonds and cashews in a bowl with the coconut, goji berries, cocoa powder, chia seeds and nut butter.
Add the melted coconut oil and cacao butter. Stir well until everything is well combined.
Then scoop into a tray and spread out evenly . My tray is 34x11cm but don’t worry if yours is bigger as you don’t need to spread it over the whole tray. They should be about 0.5 cm in thickness.
Pop the tray into the freezer for 20 minutes. Once ready remove from the tray and chop into small or big pieces. Enjoy!
